A. Upon leaving the synagogue he shall go to his house, and his heart shall rejoice, and his honor shall be glad, and he shall trust in Hashem, blessed be He, that he will be written and sealed for a good and peaceful life, and he shall make Kiddush with a whole and cheerful heart, and remove from himself all grief and sighing, and set his table and eat and rejoice for it is a Yom Tov (festival day), and take to heart that the table is an altar of atonement.
B. He shall be careful not to become angry, for besides the severity of the prohibition of anger which is harsh at any time, behold on the day of Rosh Hashanah it is not a good sign for a person. And the wife should be quick to set the table and cover it with a fine tablecloth before he comes home from the synagogue, so that upon their arrival he will find the table set, which is a good sign; but if it happens that he comes and does not see the table set, he shall not engage in a dispute with his wife and get angry, as anger is an extremely bad sign, but rather he shall bear it and not make a fuss, even in his heart.
C. Before Kiddush he shall sit in his place on a cushioned seat, and say the passage Petichat Eliyahu Hanavi, z"l up to "Arise, Rabbi Shimon and let words be originated..." etc., afterwards he shall say the verse "And Noah found grace in the eyes of Hashem" 12 times, and afterwards the verse "And Yitzchak sowed in that land..." etc. 12 times, and afterwards the verse "For with You is the source of life; in Your light we will see light." ten times, and afterwards "Light is sown for the righteous, and gladness for the upright in heart!" 17 times, and afterwards "And you shall say: 'Thus to the living! Peace be to you! Peace to your house! And peace to all that you have!'"... etc. ten times, and say "May the year and its blessings begin" and stand to recite Kiddush.
D. If Rosh Hashanah falls on Friday night, he shall enter his house and say in a loud voice "Shabbat Shalom and a good year," and if his mother is alive he shall kiss her hands, and look at the candles and intend one corresponding to "Remember" and one corresponding to "Observe," afterwards he shall say "This is the meal of the sacred apples field," and circle the table 2 times, and smell the myrtles, and say "Peace be unto you," and Eshet Chayil, and Yihei Ra'avah, and some abstain from saying the phrase "Azamer B'Shvachin", and after that sit to say Petichat Eliyahu and the remaining verses—namely "And Noah found grace" 12 times, "And Yitzchak sowed in that land..." etc. 12 times, and so too the rest of the verses as mentioned above, and say "May the year and its blessings begin" and stand to recite Kiddush.
E. After Kiddush he shall wash his hands and bless and break over 2 loaves, for Rosh Hashanah's rule is like a holiday requiring double bread (Lechem Mishneh) and break over the bread held in his right hand, and they shall eat a K'zayit [olive's volume] of bread and the first course, and afterwards do the order of the Simanim for a good omen.
F. After dipping the slice over which Hamotzi was recited into salt 3 times, he shall dip the slice into sugar as well for a good omen.
G. On the second night of Rosh Hashanah it is possible to recite the Shehecheyanu blessing in Kiddush, and there is no need to search for a new fruit at all, and if a new fruit happens to be before him on the second night it shall be placed in front of him when he blesses Shehecheyanu and he shall intend it, but there is no need to be meticulous to make an extensive search (for new fruit) to fulfill this matter.
H. He should be accustomed to eat on Rosh Hashanah during both nights at his table according to this order:
First he takes dates and blesses "Who creates the fruit of the tree" and eats one date, and afterwards says "May it be Your will... that our enemies be consumed" etc., and eats a second date, and intends in this request for lower earthly enemies.
Afterwards he takes Rubia—which is what is called in Arabic Lubia—and says "May it be Your will... that our merits increase and hearten us."
Afterwards he takes Karti [leek] and says "May it be Your will... that our enemies and haters be cut off," and intends in this for the evil forces that were created from the iniquities of man and the sparks of Keri (emissions).
Afterwards he takes Silka [beets] and says "May it be Your will that our enemies depart..." etc., and intends in this for the prosecutors and forces of harsh judgment from above.
Afterwards he takes Kara [gourd] and says "May it be Your will that the evil of our decree be torn" (and intends the holy name K'R'A) "and may our merits be read before You."
Afterwards a sweet pomegranate and says "May it be Your will that we be full of mitzvot like a pomegranate."
Afterwards an apple cooked in sugar and says "May it be Your will... that You renew for us a good and sweet year."
Afterwards the head of a sheep and asks "May it be Your will that we be as the head and not as the tail, and remember for us the binding of Yitzchak our father, son of Avraham our father, peace be upon them."
I. And some are accustomed also to eat lungs, and say "May it be Your will that we be light as a lung, and please see our affliction" etc.
And so too he brings an etrog cooked in sugar, and says "May it be Your will that we be splendid in mitzvot."
And so too over everything he eats he says "May it be Your will...", when eating meat he says "May it be Your will that good tidings be announced to us. When eating couscous, he says "May it be Your will that our enemies and haters turn against each other and all who seek our harm, when eating Pol beans ((Fava bean או Broad bean) he says "May our enemies and haters fall, Amen."
And some are accustomed to eat from mitzvah-matzot that are eaten on the night of the Seder.
J. He shall not eat on Rosh Hashanah anything sour nor a cooked dish containing souring agents, and so too he shall be careful with sour fruits such as pomegranates, grapes, and pears, and the Mateh Ephraim wrote that he shall not eat fruit that has not yet fully ripened. And so too he shall not eat nuts, for Egoz [nut] is the numerical value of Chet [sin], and it also increases phlegm and saliva and disrupts prayer. And so too he shall not eat liver. And so too he shall not eat black grapes.
K. It is a good custom to eat fat meat and sweet food items for a good sign, but he shall not fill his stomach with them, but rather "they who taste it merit life," and he shall drink sweet drinks according to the verse in Ezra: "Eat rich foods and drink sweet drinks and send portions to those for whom nothing is prepared, for this day is holy to our master; do not grieve, for the joy of Hashem is your strength," for this verse was said regarding the day of Rosh Hashanah.
L. Some are accustomed to eat fish on Rosh Hashanah, and say over it "May it be Your will from before You, Hashem, our L-rd and L-rd of our ancestors, that we proliferate and multiply like fish," and some are accustomed not to eat fish, because we found in the verse "Fish" (Dag, Nehemiah 13:16) written full as Da'ag, which is an expression of worry (De'agah), but in any case, if it falls on Shabbat they are accustomed to eat them.
M. On the night of Rosh Hashanah it is good to read at the table before washing hands for Mayim Acharonim Tractate Rosh Hashanah, which is 4 chapters of Mishnah. And so, he shall also do at the morning meal, and on the second night, and on the second day, and if it is Shabbat he shall also read 4 chapters of Tractate Shabbat as on every Shabbat. And he shall be careful to study the Mishnayot pleasantly, and so too say the quotations from the Holy Zohar arranged by Rabbeinu Yosef Chaim zlh"h in the phrasing of the Sages to say them at the table.
N. On the night of Rosh Hashanah he shall sate himself with words of Torah, "He slumbers and abides satisfied, he shall not be visited with evil," and he shall not engage in marital relations on the night of Rosh Hashanah unless it happens to be her night of immersion for a mitzvah.
